275g (2½ cups) almond meal/flour (from blanched almonds)

60g (½ cup) golden flaxseed meal

42g (⅓ cup) arrowroot flour or tapioca 1 tsp cinnamon

½ tsp cumin

1 tsp baking soda (bicarb)

½ tsp fine sea salt

3 tsp thyme leaves or 1 tsp dried thyme leaves

4 large eggs

60ml (¼ cup) macadamia oil or mild olive oil

1 Tbsp apple cider vinegar

2 tsp 100% maple syrup

160g (1½ cups) pumpkin, grated

Pumpkin seeds (pepitas) to sprinkle on top
